Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400F (200C).
  2. Line a large baking sheet with parchment paper.
  3. In a mixing bowl, toss together the zucchinis, chickpeas, bell pepper, onion, olive oil, oregano, smoked paprika, salt, and pepper until well coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Roast for about 25-30 minutes, tossing halfway through until vegetables are tender and golden.
  6. Sprinkle feta cheese over the top and return to the oven for an additional 5 minutes.
  7. Garnish with parsley and serve warm.
