- 2 medium zucchinis, sliced into rounds
- 1 can (400g) chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- Preheat your oven to 400F (200C).
- Line a large baking sheet with parchment paper.
- In a mixing bowl, toss together the zucchinis, chickpeas, bell pepper, onion, olive oil, oregano, smoked paprika, salt, and pepper until well coated.
- Spread the mixture evenly on the prepared baking sheet.
- Roast for about 25-30 minutes, tossing halfway through until vegetables are tender and golden.
- Sprinkle feta cheese over the top and return to the oven for an additional 5 minutes.
- Garnish with parsley and serve warm.
