  • 1/2 cup grated parmesan
  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 15 ounce can organic pumpkin puree
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a large mixing bowl, combine breadcrumbs and milk; let sit for 2-3 minutes. Add onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, and both eggs; mix well.
  2. Gently fold in ground turkey along with salt and pepper until just combined. Chill the mixture for 20-25 minutes.
  3. Shape into meatballs and sear in a skillet with oil over medium heat until browned.
  4. For the sauce, sauté onion and garlic in ghee or butter; whisk in pumpkin puree and chicken stock until smooth. Stir in remaining sauce ingredients.
  5. Return meatballs to the sauce; simmer to heat through before serving.
