  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 1/4 cup toasted almonds
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon honey (optional)

Instructions

  1. Heat olive oil in a tagine or heavy pot over medium heat. Brown the chicken thighs on both sides and set them aside.
  2. In the same pot, sauté sliced onions and minced garlic until soft.
  3. Stir in spices and cook for about 1 minute to release their aromas.
  4. Return the chicken to the pot along with chopped apricots and raisins. Pour in chicken broth, cover, and simmer for 45 minutes until tender.
  5. Stir in toasted almonds and optional honey for sweetness before serving.
  6. Garnish with fresh cilantro and serve hot with couscous or bread.
