- 1 cup extra-virgin olive oil (divided)
- 4 sprigs of fresh thyme
- 1 handful of almonds (or your preferred nuts, roughly chopped)
- 8 garlic cloves (thinly sliced)
- 1/2 teaspoon Aleppo pepper or red chili flakes (optional for a hint of heat)
- 3 ounces feta cheese, crumbled
- 1/3 cup fresh parsley (chopped)
- Fresh bread (for serving)
- Prepare the thyme oil by gently simmering half of the olive oil with thyme sprigs in a small saucepan for about 5 minutes. Allow it to cool.
- In another pan, heat the remaining olive oil over medium heat and sauté sliced garlic until golden brown, then add chopped almonds and cook for another minute.
- In a food processor, blend together crumbled feta cheese, sautéed garlic and nuts, cooled thyme oil, optional Aleppo pepper, and chopped parsley until slightly chunky.
- Transfer to a serving dish and drizzle with extra olive oil if desired. Serve with fresh bread or vegetable sticks.
