Ingredients

  • 1 cup extra-virgin olive oil (divided)
  • 4 sprigs of fresh thyme
  • 1 handful of almonds (or your preferred nuts, roughly chopped)
  • 8 garlic cloves (thinly sliced)
  • 1/2 teaspoon Aleppo pepper or red chili flakes (optional for a hint of heat)
  • 3 ounces feta cheese, crumbled
  • 1/3 cup fresh parsley (chopped)
  • Fresh bread (for serving)

Instructions

  1. Prepare the thyme oil by gently simmering half of the olive oil with thyme sprigs in a small saucepan for about 5 minutes. Allow it to cool.
  2. In another pan, heat the remaining olive oil over medium heat and sauté sliced garlic until golden brown, then add chopped almonds and cook for another minute.
  3. In a food processor, blend together crumbled feta cheese, sautéed garlic and nuts, cooled thyme oil, optional Aleppo pepper, and chopped parsley until slightly chunky.
  4. Transfer to a serving dish and drizzle with extra olive oil if desired. Serve with fresh bread or vegetable sticks.
