  • 15 oz can pinto beans, drained and rinsed
  • 28 oz can fire-roasted crushed tomatoes
  • 1 ¾ cups beef broth
  • 1 tablespoon olive oil
  • 1 ½ teaspoons garlic, minced
  • 3 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Warm olive oil in a large Dutch oven over medium-high heat.
  2. Sauté the chopped onion for about 2 minutes until softened.
  3. Add ground beef and cook until browned (about 5 minutes), breaking it up as it cooks.
  4. Drain excess fat and add minced garlic; stir for 30 seconds.
  5. Mix in chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste.
  6. Pour in beef broth while scraping up any bits from the pot.
  7. Add crushed tomatoes and beans; bring to a boil then reduce heat and simmer for 1-2 hours.
  8. Uncover during the last 30 minutes to thicken if desired.
