  • 1 lb ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp Thai red curry paste
  • 1 tbsp neutral oil (for frying)
  • 1 small yellow onion, diced
  • 1 tbsp additional neutral oil
  • 1 can coconut milk or broth
  • Salt and pepper to taste
  • 1 tbsp green onions, finely chopped
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. In a mixing bowl, combine ground chicken, panko breadcrumbs, egg, minced garlic, grated ginger, red curry paste, and chopped herbs. Mix until well combined.
  2. Form the mixture into small balls (about 1 inch).
  3. Heat neutral oil in a skillet over medium heat. Add meatballs and fry until golden brown on all sides (8-10 minutes). Remove from skillet.
  4. In the same skillet, add more oil and sauté diced onion until soft (3-4 minutes). Stir in minced garlic and red curry paste; cook for another minute.
  5. Pour in coconut milk; bring to a simmer. Add meatballs back into the skillet and simmer for 5-7 minutes before serving.
