  • sliced avocado
  • 1 cup steamed broccoli florets
  • 1 cup cooked basmati rice
  • 1 cup grated carrots
  • 1 tsp olive oil or ghee
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Crack the eggs gently into the pan and cook sunny-side up until whites are set with crispy edges. Season with salt and pepper.
  2. In another skillet, sauté grated carrots in olive oil or ghee until soft. Stir in cooked basmati rice along with chopped herbs and spices until everything is heated through.
  3. Steam broccoli florets for about 3-4 minutes until bright green and tender.
  4. In a serving bowl, layer the flavored rice at the bottom, followed by broccoli florets. Top with sliced avocado and fried eggs.
