  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 16 oz baby spinach leaves
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 oz crumbled feta cheese
  • 3 tablespoons olive oil
  • ½ cup whole milk
  • 1 large egg
  • 2 tablespoons plain yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package of Phyllo Dough (thawed overnight in the fridge)
  • 2 egg yolks
  • 2 tablespoons sesame seeds
  • ½ teaspoon Nigella seeds (optional)

Instructions

  1. In a large pan, heat olive oil over medium heat. Add onions and cook until translucent. Stir in spinach, salt, and pepper; cook until wilted.
  2. Preheat oven to 350°F (175°C).
  3. In a mixing bowl, whisk together olive oil, milk, egg, yogurt, salt, and pepper.
  4. Layer phyllo dough on a parchment-lined baking sheet. Brush with the milk mixture between layers.
  5. Spread the cooled filling over the layered dough and cover with additional phyllo layers brushed with the milk mixture.
  6. Fold edges inward and pre-slice into portions before brushing with egg yolk.
  7. Bake for 30-35 minutes until golden brown.
