  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons oil (vegetable or ghee)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and prepare by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a Dutch oven, heat oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add garlic and ginger; cook for another minute.
  3. Stir in Madras curry powder, turmeric, cayenne pepper, ground cumin; toast the spices for about 2 minutes.
  4. Add lamb cubes, season with salt and pepper; brown on all sides (5–7 minutes).
  5. Mix in tomato paste and crushed tomatoes; pour in broth and stir well.
  6. Bring to a gentle boil, reduce heat to low, cover, and simmer for about an hour until lamb is tender.
  7. Stir in coconut milk during the last 10 minutes of cooking. Adjust seasoning before serving hot with rice or naan.
