  • 4 cups chicken broth
  • 2 cups whole milk or heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 45 jalapeños, chopped (seeds removed for milder heat)
  • 1/2 cup cooked, diced chicken or suitable protein
  • Salt and pepper to taste
  • 4 slices of bread (your choice of white, whole wheat, or sourdough)
  • 4 tablespoons butter, softened
  • 1 1/2 cups shredded cheddar cheese
  • Fresh cilantro or green onions for garnish

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the diced onion and minced garlic until soft.
  2. Pour in the chicken broth and milk (or heavy cream) and bring to a simmer for about 5–7 minutes.
  3. Gradually add the cream cheese, cheddar cheese, and Monterey Jack cheese while stirring until melted.
  4. Mix in the chopped jalapeños and cooked chicken (or preferred protein), seasoning with salt and pepper to taste.
  5. For grilled cheese dippers, butter one side of each slice of bread. In a skillet, place two slices buttered-side down, add shredded cheese on top, then place another slice on top buttered-side up. Cook until golden brown on both sides and cut into strips.
  6. Serve the soup hot with garnishes like fresh cilantro or green onions alongside the grilled cheese dippers.
