  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrot
  • 1 cup grated zucchini
  • 1/2 cup walnuts (optional)
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1 8 oz package reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. In a large bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until blended. Stir in grated carrot and zucchini.
  3. In another bowl, mix flour, baking powder, ground ginger, and baking soda. Gradually add dry ingredients to wet mixture until just combined. Fold in walnuts if using.
  4. Pour batter into the prepared dish and bake for about 25 minutes or until a toothpick comes out clean.
  5. To make the frosting, beat cream cheese with icing sugar until smooth; stir in lemon zest.
  6. Once cooled completely, frost the bars and cut into squares.
