  • 1 tbsp Thai red curry paste
  • 1 cup chicken stock or vegetable stock
  • 1/3 cup coconut milk
  • 1 tsp sugar
  • 2 kaffir lime leaves
  • Thai basil leaves

Instructions

  1. In a large pot, heat 1 tablespoon of neutral oil over medium-high heat. Add 1 tablespoon of Thai red curry paste and sauté for 1-2 minutes until fragrant.
  2. Pour in 1 cup of chicken or vegetable stock, stirring to dissolve the curry paste completely.
