  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus extra for brushing naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 can (14 oz) coconut milk
  • Fresh cilantro for garnish
  • 1 beef stock cube
  • 2 tbsp tomato paste
  • Salt and freshly ground pepper, to taste

Instructions

  1. Heat oil in a cast iron pot or slow cooker over medium-high heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and grated ginger; cook for another minute.
  2. Brown beef cubes on all sides in the pot. Stir in curry paste, ensuring even coating.
  3. Pour in coconut milk, crumbling in the beef stock cube and adding tomato paste. Season with salt and pepper.
  4. If using a slow cooker, set to low for 6-8 hours or high for 4-5 hours until tender. For a cast iron pot, cover and simmer on low heat for 2-3 hours.
  5. Prepare garlic naan by brushing pre-made or homemade naan with garlic mixed in melted butter or oil before reheating on a skillet.
