  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat and sear the beef cubes until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion and garlic for about 5 minutes. Add diced carrots and celery; cook until softened.
  4. Return the seared beef to the pot. Stir in diced tomatoes, beef broth, tomato paste, and herbs. Mix well.
  5. Cover the pot and bake in the preheated oven for about 2-3 hours until the beef is tender.
