  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 2 tbsp chopped parsley or chives (optional)

Instructions

  1. Boil the penne pasta in salted water until al dente; drain and set aside.
  2. Season chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil and butter, then sear the chicken until golden brown. Add minced garlic during the last minute of cooking.
  4. Remove chicken from the skillet and prepare the sauce by melting remaining butter and sautéing garlic until fragrant. Pour in cream and broth; simmer for a few minutes.
  5. Stir in all cheeses until melted into a creamy sauce.
  6. Toss cooked penne with the sauce, adding reserved pasta water if needed.
  7. Serve with seared chicken on top.
