  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil (or olive oil)
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • Salt & pepper to taste

Instructions

  1. Prepare rice according to package instructions and set aside.
  2. In a skillet over medium heat, add sesame oil and cook ground beef until browned. Stir in soy sauce, garlic powder, salt, and pepper. Cook until well combined.
  3. In another pan, heat olive oil over medium-high. Add minced garlic and all chopped vegetables; stir-fry for about 5-7 minutes until tender-crisp. Splash with soy sauce and toss to coat.
  4. In a serving bowl, layer rice, ground beef, and stir-fried veggies. Enjoy!
