  • 2 slices whole grain or sourdough bread
  • 2 soft-boiled eggs (boiled ~7 minutes)
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 45 cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • Salt & freshly ground black pepper

Instructions

  1. Boil the Eggs: Bring water to a boil in a pot. Gently lower in the eggs and boil for 7 minutes. Transfer to an ice bath to cool before peeling.
  2. Sauté the Veggies: Heat olive oil in a non-stick skillet over medium heat. Sauté sliced mushrooms until golden brown, then add spinach and cook until wilted.
  3. Assemble the Toast: Spread cream cheese on one slice of toast and top with tomato slices. On the other slice, pile the sautéed mushrooms.
  4. Plate: Arrange the toast alongside halved soft-boiled eggs and wilted spinach. Season with salt, pepper, and garnish with fresh parsley.
