  • 2 leeks, chopped
  • 2 large carrots, sliced
  • 6 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 pound fresh mushrooms, sliced
  • 1 cup half-and-half
  • Fresh dill for garnish

Instructions

  1. In a large saucepan, melt 3 tablespoons of butter over medium heat. Add chopped leeks and sliced carrots; sauté for about 5 minutes until softened.
  2. Pour in chicken broth and season with dried dill, salt, pepper, and a bay leaf. Stir well.
  3. Add diced potatoes to the pot; cover and cook for about 20 minutes or until potatoes are tender but firm. Discard the bay leaf.
  4. In a skillet, melt the remaining butter over medium heat and sauté sliced mushrooms for about 5 minutes until browned. Add them to the soup pot.
  5. In a mixing bowl, whisk half-and-half with flour until smooth; gradually stir into the soup to thicken.
  6. Serve warm, garnished with fresh dill.
