  • 1/2 cup fresh raspberries (or thawed frozen)
  • 1/4 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter with granulated and brown sugars until light and fluffy.
  4. Mix in the egg and vanilla until just combined.
  5. Gradually stir in the dry ingredients until soft dough forms; do not overmix.
  6. Gently fold in cream cheese until evenly distributed, followed by fresh raspberries.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
  8. Sprinkle a pinch of sugar on top of each cookie.
  9. Bake for 12–15 minutes until edges are lightly golden; centers may look slightly underbaked.
  10. Cool on the baking sheet before transferring to a wire rack and drizzle with raspberry jam before serving.
