  • 15 ounces ricotta cheese
  • 2 eggs
  • 3 ounces parmesan cheese
  • 1/2 cup mozzarella cheese (shredded)
  • 4 large multi-colored carrots
  • 2 zucchini
  • 2 tablespoons olive oil
  • 1 tablespoon oregano

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Unfold the puff pastry into a tart pan and weight with parchment paper and beans; bake for 15-20 minutes. Remove weights and cool.
  3. In a bowl, mix eggs, ricotta, parmesan, salt, and mozzarella until smooth.
  4. Thinly slice zucchini and carrots using a peeler or mandolin; microwave for 1 minute to soften.
  5. Spread the cheese mixture over the cooled tart base. Roll vegetable slices into roses and arrange them on top.
  6. Brush with olive oil and bake at 375°F (190°C) for about 50 minutes until golden.
