  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped onion
  • 1 tablespoon chopped garlic
  • 2 large eggs
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup panko crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grate zucchini and squeeze out excess moisture.
  3. In a bowl, mix drained zucchini, salt, onion, garlic, eggs, parmesan (reserve 2 tablespoons), mozzarella, cheddar, and panko until combined.
  4. Pour mixture into a greased baking dish and sprinkle reserved parmesan on top.
  5. Bake for approximately 25 minutes until golden brown.
