  • 6 slices Turkey
  • 4 sweet onions
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1â…“ cups pumpkin purée
  • 2 cups mozzarella cheese
  • Fresh sage leaves
  • 2 sheets frozen puff pastry

Instructions

  1. Cook the chopped Turkey in a large skillet until crisp. Set aside on paper towels.
  2. In the same skillet, caramelize thinly sliced onions with salt and pepper over medium-low heat for about 25–30 minutes. Add apple cider and cook for an additional 5 minutes.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface, place on parchment-lined baking sheets, score edges, and prick the center.
  4. In a mixing bowl, combine ricotta and pumpkin purée; season with salt and pepper. Spread mixture onto the pastry base, layer with caramelized onions, mozzarella cheese, and turkey.
  5. Scatter fresh sage over the top, brush edges with egg wash, and bake for 25–30 minutes until golden brown.
