  • 3/4 teaspoon pumpkin spice
  • 1/4 cup pumpkin pie puree
  • 2 1/2 tablespoons melted coconut oil or butter
  • 1/2 cup almond milk or any preferred milk
  • 3 tablespoons melted coconut oil or butter (for topping)
  • 1 cup sugar (for topping)
  • 1 1/2 tablespoons cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, brown sugar, salt, baking powder, and pumpkin spice.
  3. In a separate bowl, mix pumpkin puree with melted coconut oil/butter and almond milk until smooth.
  4. Combine wet ingredients with dry ingredients gently until just mixed.
  5. Spoon batter into a donut pan, filling each cavity three-quarters full.
  6. Bake for about 12 minutes or until a toothpick comes out clean.
  7. For topping, mix sugar and cinnamon in a small bowl.
  8. Once cooled slightly, brush donuts with melted coconut oil/butter and roll in cinnamon sugar.
