Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or by greasing.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, beat together the eggs, pumpkin puree, sugars, and vegetable oil until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  5. Fold in the chocolate chips evenly throughout the batter.
  6. Fill each muffin cup two-thirds full with batter and bake for about 16–20 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before transferring muffins to a wire rack.
