  • 2 tsp (10 ml) vanilla extract
  • 4 oz. (113 g) cream cheese, room temperature
  • 4 tbsp (57 g) unsalted butter, room temperature
  • 1 tsp (5 ml) vanilla extract
  • 1 cup (125 g) powdered sugar
  • 13 tsp (515 ml) milk, as needed

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×5 loaf pan.
  2. Whisk together dry ingredients in one bowl: flour, baking soda, spices, and salt.
  3. In another bowl, mix canola oil with sugars until combined; add eggs one at a time. Stir in pumpkin puree and vanilla.
  4. Gradually combine wet and dry mixtures until just mixed.
  5. Pour batter into the prepared pan; bake for 55 minutes or until a toothpick comes out clean.
  6. Cool before frosting: beat cream cheese and butter until smooth; add vanilla and powdered sugar gradually.
