  • 200 g pineapple slices (about 22.5 cups)
  • 4 tbsp butter (melted and cooled)
  • 1/2 cup brown sugar
  • 1 2/3 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 stick butter (1/2 cup, room temperature)
  • 2/3 cup sugar
  • 2 eggs
  • 2/3 cup milk
  • 1 tsp vanilla extract or lemon/orange extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a round cake pan with melted butter and sprinkle brown sugar evenly on the bottom.
  3. Arrange pineapple slices over the brown sugar.
  4. In a mixing bowl, cream room temperature butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  5. Mix in your chosen extract, then alternate adding dry ingredients and milk until just combined.
  6. Pour batter over pineapple and bake for about 40-45 minutes or until a toothpick comes out clean.
  7. Allow cooling for 10–15 minutes before inverting onto a serving plate.
