  • 500g baby potatoes, halved
  • 300g fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, rosemary, salt, and pepper. Spread evenly on one side of a baking dish.
  3. Season chicken breasts with olive oil, garlic powder, paprika, oregano, salt, and pepper in another bowl until well coated.
  4. Place the seasoned chicken in the center of the baking dish among the potatoes.
  5. Bake for 20 minutes until chicken starts cooking through and potatoes begin to brown.
  6. Toss fresh green beans with olive oil, salt, and pepper; add to the baking dish.
  7. Return to oven for another 20 minutes until chicken is fully cooked, potatoes are golden brown, and green beans are tender.
  8. Slice the chicken before serving it alongside crispy potatoes and green beans.
