  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 lb rigatoni pasta
  • Salt to taste

Instructions

  1. Cook rigatoni according to package directions; drain and set aside.
  2. Toss chicken with Cajun seasoning, paprika, garlic powder, and black pepper until coated.
  3. In a skillet, melt 2 tbsp butter over medium-high heat and cook the seasoned chicken until golden brown. Remove and set aside.
  4. In the same skillet, melt remaining 2 tbsp of butter over medium heat and sauté minced garlic until fragrant.
  5. Whisk in flour to create a roux, and gradually add milk and chicken broth until smooth.
  6. Stir in cream cheese until melted, followed by mozzarella and Parmesan cheese.
  7. Combine sauce with cooked pasta and chicken; transfer to a baking dish.
  8. Top with extra mozzarella cheese and bake at 375°F for 15-20 minutes until bubbly.
