  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (1 stick) plant-based butter (melted and cooled slightly)
  • 1 cup granulated sugar
  • 2 large eggs or 2 tablespoons flaxseed meal mixed with 5 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chunks
  • 1 (12 oz) package orange candy melts
  • 9 large vegan marshmallows
  • 1/2 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking pan.
  2. In a medium bowl, whisk together cocoa powder, flour, salt, and baking powder.
  3. In a large bowl, combine melted butter, sugar, eggs (or flaxseed mixture), and vanilla extract. Fold in dry ingredients along with chocolate chunks until just combined.
  4. Spread the batter evenly in the prepared pan and bake for about 30 minutes. Allow brownies to cool completely before slicing.
  5. Melt orange candy melts and dip each marshmallow in the coating. Place on top of each brownie and add a chocolate chip as a stem. Pipe faces onto marshmallows using melted chocolate.
