  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil the eggs for 7-8 minutes until hard-boiled. Cool them in ice water, then peel and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes; toss gently.
