  • 2 tbsp fresh lemon juice
  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar (for raspberry swirl)
  • 1 tbsp lemon juice (for raspberry swirl)

Instructions

  1. Prepare the raspberry swirl: In a saucepan, combine raspberries, sugar, and lemon juice. Simmer for 5-7 minutes until thickened. Strain to remove seeds and set aside.
  2. Preheat oven to 325°F (165°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into a springform pan and bake for 8-10 minutes; let cool.
  3. Make cheesecake filling: Beat cream cheese with an electric mixer until smooth. Gradually add sugar, then mix in sour cream, lemon zest, lemon juice, and vanilla extract. Add eggs one at a time on low speed.
