  • 1 clove garlic
  • 80g chicken sausage
  • 15g fresh parsley
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g Parmesan cheese

Instructions

  1. Heat the olive oil in a large saucepan over medium heat. Add chopped shallots, minced garlic, diced chicken sausage, and parsley stalks; cook until softened (about 5 minutes).
  2. In another pan, simmer chicken or vegetable stock with tinned plum tomatoes.
  3. Stir risotto rice into the chicken sausage mixture, coating thoroughly. Pour in red apple vinegar and reduce mostly.
  4. Incorporate stock gradually, one ladle at a time while stirring constantly until absorbed.
  5. Once rice is tender yet al dente (18-20 minutes), mix in grated Parmesan cheese, salt, and pepper to taste. Let it rest off heat for 5 minutes.
  6. Serve topped with extra Parmesan cheese and chopped fresh parsley.
