  • Crumbled chicken sausage
  • Leeks
  • Fennel bulb
  • Parsnip
  • Carrot
  • Celery
  • Garlic
  • Whole tomatoes
  • Navy beans
  • Chicken stock/broth
  • Kale
  • Italian flat-leaf parsley
  • Lemon

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large soup pot over medium-high heat, add 2 tablespoons of oil and brown the crumbled chicken sausage.
  3. Stir in sliced leeks, fennel, parsnip, carrot, and celery. Season with salt, pepper, and Italian seasoning. Sauté until vegetables are tender.
  4. Add pressed garlic, chopped tomatoes, navy beans, and chicken stock; stir well.
  5. Cover and simmer for 20 minutes until vegetables are soft.
  6. Stir in kale, parsley, and lemon juice before serving hot over gnocchi.
