  • 1 tsp brown sugar

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 14 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper
  • 2 medium avocados (chopped)
  • 1 cup cherry tomatoes (quartered) or 2 Roma tomatoes (seeded and chopped)
  • Fresh corn from 1 ear
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper (chopped)
  • 1 jalapeno pepper (diced, seeds separated)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove (minced or 1/4 tsp garlic powder)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. In a large mixing bowl, whisk together olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper.
  2. Add chicken breasts to the marinade; ensure they are fully coated. Marinate for at least 30 minutes (up to 4 hours for deeper flavor).
  3. Preheat grill or skillet over medium-high heat. Cook marinated chicken for about 5 minutes per side until juices run clear.
  4. Meanwhile, combine chopped avocados, tomatoes, corn, red onion, bell pepper, jalapeño, cilantro, minced garlic (or garlic powder), lime juice, cumin, and salt in a separate bowl to make the avocado salsa.
  5. Slice the cooked chicken and serve topped with avocado salsa.
