  • 23 medium-sized apples (6070 thin slices)
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 tablespoons lemon juice (freshly squeezed)
  • ¼ teaspoon salt
  • 3 tablespoons apricot preserves
  • 1 tablespoon coconut sugar
  • ½ teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 sheet of puff pastry (9.5 x 9 inches)

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. Core and thinly slice the apples into 1/8-inch pieces. Toss them with melted butter, lemon juice, and salt in a bowl.
  3. Spread out the apple slices on the baking sheet and bake for about 10 minutes until softened but still pliable.
  4. Grease a muffin pan with melted butter while waiting for the apples to cool.
  5. Mix coconut sugar, remaining cinnamon, and nutmeg in another bowl.
  6. Roll out puff pastry into a rectangle, brush with apricot preserves, and sprinkle with the sugar-spice mixture.
  7. Cut into strips, placing apple slices along each strip before rolling them up into rose shapes.
  8. Place each rose in the muffin pan and bake for 40-45 minutes until golden brown.
