  • 3 pounds roma or plum tomatoes
  • 8 cloves garlic
  • 3 tablespoons olive oil
  • 2 yellow onions
  • ½ cup packed basil leaves
  • ½ teaspoon dried oregano
  • 12 cups water or vegetarian broth
  • Freshly ground salt and pepper to taste
  • Optional: light/regular coconut milk, whole dairy milk/heavy cream, Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and arrange halved tomatoes and garlic. Drizzle with olive oil and season with salt and pepper. Roast for 40-45 minutes.
  2. In a large pot, heat olive oil over medium heat. Add sliced onions and cook until golden brown, about 20 minutes.
  3. Let roasted tomatoes cool slightly before blending them with garlic, basil, and caramelized onions until smooth.
  4. Return blended mixture to the pot, stir in oregano and broth, then simmer for about 10 minutes.
