  • 1 bone-in, skin-on chicken thigh
  • 2 medium potatoes, cut into wedges
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs (oregano, thyme, rosemary mix)
  • Pinch of salt
  • Pinch of freshly ground black pepper

Instructions

  1. Preheat your oven to 200C (400F).
