Ingredients

  • 2 eggs
  • 1 cup cubed sweet potatoes
  • 1 cooked sausage link (chicken or turkey), sliced
  • 1 cup chopped kale or spinach
  • Sliced avocado
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes in olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped kale or spinach, cooking until wilted; season with salt and pepper.
  3. Slice the cooked sausage and sear in the same skillet until browned on both sides (about 2-3 minutes).
  4. Whisk eggs in a mixing bowl, then pour into a nonstick skillet over medium-low heat. Stir gently until soft curds form; season with salt and pepper.
