Ingredients

  • ¼ Cup olive oil
  • 8 basil leaves (fresh)
  • Kosher or table salt (as needed)
  • 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound chicken (sliced thinly)
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • Flake salt (as needed)

Instructions

  1. Start by slicing the chicken. Set aside.
  2. Rinse and dry the basil leaves. Tear them into smaller pieces if desired.
  3. Take one ball of mozzarella, place it on your serving platter.
  4. Using toothpicks or small skewers, pierce through the mozzarella ball.
  5. Place one slice of chicken around each mozzarella ball as if wrapping it like an eye.
  6. Top it off by placing one whole black olive on top of each mozzarella ball as the 'pupil'.
  7. Drizzle olive oil over all assembled eyeballs for extra flavor.
  8. Sprinkle with kosher salt to taste.
  9. Add torn basil leaves, distributing them around the platter.
  10. Drizzle balsamic glaze over the entire arrangement to give it a glossy finish.
  11. Garnish with julienne-cut sun dried tomatoes.
