  • 3 large bell peppers, sliced from stem into 3–4 flat planks
  • 2 red onions, peeled & sliced into â…›ths
  • 1 large sweet potato, sliced into ½-inch rounds
  • 1 (one) 15-ounce can black beans, drained & rinsed
  • kosher salt & ground black pepper, to season
  • 2 cups cooked brown rice
  • 1 large avocado
  • 2 jalapeños, deseeded & roughly chopped
  • 3 cloves garlic
  • 1 cup loosely packed cilantro leaves & tender stems
  • 2 large juicy limes, juiced
  • ¼ cup water

Instructions

  1. Preheat your grill for medium-high heat (450–500°F).
  2. In a food processor, blend avocado, jalapeños, garlic, cilantro, lime juice, salt, and pepper until smooth. Gradually add water until creamy; then fold into cooked brown rice.
  3. Prepare vegetables on a baking sheet with avocado oil and seasoning; grill for 3–4 minutes per side until charred and tender.
  4. Assemble bowls by layering green rice at the bottom, topping it with grilled veggies, black beans, lettuce, and desired toppings.
