  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 3 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Juice of 1/2 lime
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut sweet potatoes into wedges, toss with olive oil, smoked paprika, and salt. Bake for 20-25 minutes until golden.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill for 6-7 minutes per side until cooked through.
  4. Mash the avocado with lime juice in a bowl; season with salt and pepper.
  5. Combine cherry tomatoes with diced avocado, red onion, olive oil, salt, and pepper in another bowl.
  6. Assemble bowls with sweet potato fries at the bottom, topped with sliced chicken, guacamole, and tomato salad.
