  • Salt & pepper to taste
  • 1 medium sweet potato, halved
  • 1 cup asparagus spears, trimmed
  • Cucumber, sliced
  • 1 tsp olive oil (for veggies)

Instructions

  1. Preheat oven to 400°F (200°C). Halve the sweet potato, season with olive oil, salt, and pepper, and roast for 30-35 minutes until tender.
  2. Rub the chicken breast with olive oil, garlic powder, paprika, salt, and pepper; grill for about 5-6 minutes on each side until cooked through.
  3. In the last 10 minutes of roasting the sweet potato, sauté asparagus and cucumber in olive oil until tender-crisp.
