  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp fresh dill, chopped
  • Salt & pepper

Instructions

  1. Prepare the tzatziki by mixing Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl. Cover and chill.
  2. Rub chicken breasts with olive oil and season with smoked paprika, oregano, garlic powder, salt, and pepper. Grill or pan-fry for 6-7 minutes per side until fully cooked (internal temperature of 165°F). Slice into strips.
  3. In serving bowls, layer chopped romaine lettuce as the base. Top with sliced cucumber, halved cherry tomatoes, red onion, and grilled chicken slices. Add a generous scoop of chilled tzatziki dip.
