  • ¾ cup un-sulfured or dark molasses
  • ½ cup unsalted butter
  • 2⅔ cups flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • ½ cup powdered sugar (for optional vanilla glaze)
  • 12 tbsp milk (for optional vanilla glaze)
  • ½ tsp vanilla extract (for optional vanilla glaze)

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare your muffin tray.
  2. In a microwave-safe bowl, melt the butter with the molasses and set aside to cool.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, and salt.
  4. Mix brown sugar, sour cream (or yogurt), milk, and egg into the cooled molasses mixture until combined.
  5. Gradually fold wet ingredients into dry ingredients until just mixed.
  6. Fill muffin trays and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 5 minutes; reduce heat to 350°F and bake for an additional 11-14 minutes until done.
  8. Cool on a wire rack before glazing with lemon glaze made from powdered sugar and lemon juice.
