  • 120ml vegetable oil
  • 2 cups granulated sugar
  • 5 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 45g unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk, room temperature
  • 4 oz German sweet chocolate, melted and cooled
  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks, lightly beaten
  • 113g unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a bundt or tube pan by greasing and flouring.
  2. In a large bowl, cream together softened butter, vegetable oil, and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Alternate adding the dry mixture with buttermilk to the batter until fully combined. Stir in melted German chocolate.
  4. Pour the batter into the prepared pan(s) and bake for 75-85 minutes or until a skewer comes out clean. Cool for 10-15 minutes before transferring to a wire rack.
  5. For the frosting, whisk evaporated milk, sugar, egg yolks, and butter in a saucepan over medium heat until thickened (about 10-12 minutes). Stir in vanilla extract, coconut, and pecans once removed from heat.
  6. Once cooled completely, frost your pound cake generously.
