  • 1 ribeye or sirloin steak (810 oz)
  • 1 cup baby or Yukon gold potatoes, cubed
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • Salt & freshly cracked black pepper
  • 1 tsp garlic powder or 1 clove minced garlic
  • Optional: fresh rosemary or thyme
  • 1 tbsp olive oil for potatoes
  • 1 tsp paprika
  • 1 tsp olive oil for green beans
  • Pinch of salt & garlic powder for green beans

Instructions

  1. Preheat oven to 425°F (220°C). Toss cubed potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
  2. Season the steak with salt, pepper, and garlic. Heat a cast iron skillet over medium-high heat, add olive oil or butter, and sear the steak for 3-4 minutes per side for medium-rare. Let rest for 5 minutes before slicing.
  3. In another pan, heat olive oil over medium-high heat. Sauté green beans with a pinch of salt and garlic powder for 5-6 minutes until tender-crisp.
  4. Plate the sliced steak with crispy potatoes and green beans. Optionally drizzle with pan juices before serving.
