  • 450 g chicken breast
  • 200 g mushrooms
  • 600 g baby potatoes
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • 1 red bell pepper, diced
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 200C (400F).
  2. In a mixing bowl, toss together the halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and pepper. Spread the seasoned potatoes evenly on a baking sheet and roast in the preheated oven for about 20-25 minutes until golden brown.
  3. While the potatoes are roasting, heat olive oil in a skillet over medium-high heat. Add the cubed chicken breast to the skillet, seasoning with salt, pepper, paprika, and dried Italian herbs. Cook until the chicken is golden brown on all sides.
  4. Stir in minced garlic, sliced mushrooms, and diced red bell pepper into the skillet. Cook for an additional 5-6 minutes until the vegetables are tender.
  5. Garnish the cooked chicken with fresh parsley before serving alongside the crispy roasted potatoes.
