  • 2 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper
  • 1 clove garlic, minced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. For the mashed potatoes: Boil salted water and cook cubed potatoes until tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. Cook the chicken: Heat olive oil and butter in a skillet over medium heat. Season the chicken with garlic powder, salt, and pepper. Cook for 6-7 minutes on each side until golden brown. Remove from skillet.
  3. Sauté the vegetables: In the same skillet, add olive oil if needed. Sauté onion until translucent; add minced garlic, mushrooms, red and yellow peppers. Season with salt and pepper; cook until softened (5-7 minutes).
  4. Serve: Plate mashed potatoes topped with sliced chicken and sautéed vegetables. Garnish with fresh parsley.
