  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 (15oz) can pure pumpkin puree or 2 cups homemade pumpkin puree
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C). Roll out the pie crust and fit it into your pie dish.
  2. In a mixing bowl, whisk together the eggs until well beaten. Add both sugars, pumpkin puree, heavy cream, and vanilla; mix until smooth.
  3. Stir in spices and salt until fully combined.
  4. Pour the filling into the prepared crust and bake for 15 minutes at 425°F (220°C). Reduce heat to 350°F (175°C) and bake for another 45 minutes or until set.
