  • 1/2 cup water (adjust as needed)
  • 2 medium potatoes, boiled, peeled, and diced
  • 1/2 cup green peas (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 inch piece ginger, minced
  • 1 green chili, chopped (optional)
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)
  • Vegetable oil (for deep frying)

Instructions

  1. Prepare the dough by mixing flour and salt in a bowl. Add vegetable oil and gradually incorporate water until you form a smooth dough. Cover and let rest for 30 minutes.
  2. For the filling, sauté chopped onion, garlic, ginger, and optional chili in oil until soft. Stir in spices and cooked potatoes with peas; mix well and season with salt and lemon juice. Let cool.
  3. Roll out dough into circles, cut them in half to form cones, fill with the vegetable mixture, seal edges with water.
  4. Heat oil for deep frying; cook samosas until golden brown (about 4–5 minutes). Drain excess oil on paper towels.
